KULFI
Ingredients:
Milk – 2 liter
Corn flour – 2 tbsp
Sugar – 180-240 grams
Chopped badam- 20
Chopped pista – 20
Saffron – ½ tbsp
Khoya – 200 grams
Elachi dana – 8
Method:
Beat milk and corn flour so that no lumps remains
Put it in a heavy based pan and put it on the fire
Once it boils reduce the heat
Add grated khoya, when milk thickens a little
Cook till it reduces to 1/3 rd quantity
Add sugar, nuts and saffron
Cool it
Put it in a kulfi moulds
Keep it in the freezer for 7-8 hours
FALUDA
Ingredients:
Arrarot - 1cup
Water – 2 cup
Plenty of icy cold water
Method:
Mix water and arrarot and keep it on fire
Cook stirring all the time it becomes thick and transparent
Put this mixture I n a sieve machine
When it is hot and pres sit out in the icy cold water
Serve it with kulfi
