MINTI CORN AND VEGETABLE PARANTHA
Ingredients:
Cabbage - 100 grams (finely chopped)
Frozen corn – 1 small tin
Potatoes – 2 (peeled and roughly chopped)
Onion – 1 (finely chopped)
Lemon juice – 1
Garam masala – ½ tsp
Coriander leaves – 1 tsp finely chopped
Green chili paste – 1 tsp
Mint Sauce :
Mint leaves – 25 grams
Lemon juice – 1 tsp
Cumin seeds – ½ tsp
Green chili- 3
Salt – 1tsp
Water – 100 ml
Method:
Sprinkle salt over the cabbage and leave it for 10 minutes
Crush the corn
Squeeze the water from the cabbage
Heat oil
Add potatoes
Sprinkle little water
Cover and cook till soft
Add cabbage, onion and cook for a minute
Add corn, lemon juice, garam masala, coriander leaves, green chili paste and salt
Mix well
Keep aside
Blend the ingredients for sauce
Knead flour with mint sauce, salt , little oil and water
Break two pieces of the dough
Make round balls
Roll them out
Place the stuffing
Cover with the other and make paranthas
